Rosemary Olive Oil Crock Pot Bread!

    Yes, that's no mistake. Bread made in the crock pot. I'm not 100% thrilled with how this turned out but it's all on me and there are a couple of easy fixes. I found this on Host the Toast through pinterest (click the link for the recipe). I bought a little too much flour and yeast over the holidays so I've been on a mission to find some fantastic breads so I can start making it at home more often. 

     Don't worry, even without it being perfect it is VERY good. The directions are very specific and easy to follow. The bread is soft, dense, and just the right texture.

     I think I let the dough rise too much. I'm not a pro baker. I dunno. Someone out there that does, please share! It sure is a funky shape. It fell a bit on one side during baking/cooking/crock-potting. Maybe it was the parchment around it. I'm not sure. I followed the directions and it was nice and round when I put it in. It may have been fine without the second rise. Again, not sure.

     I'll be trying again to find out for sure. I also used dried rosemary instead of fresh. I'm not a fan of the saltiness on the top but I do think I'd brush some butter over it to get the crispy crust and golden color without broiling.

   This is awesome for two reasons besides being delicious (and it is! husband/kid approved!). #1. It's very simple to make. #2 It goes in the crock pot so the oven is free for other dishes . . . like, say, dessert.

HAPPY NEW YEAR!

     We spent our New Years Eve in. We watched some old movies like TMNT 2: The Secret of the Ooze. After the kiddos were in bed we played some of this silly shooter on the Xbox called Shoot Many Robots. Loving it. It's really easy and amusing. It's ever so slightly crude. Nothing complicated. At least, if you find swarms of psycho robots and redneck humor amusing you'll likely enjoy it. We do. So, yeah. Doesn't hurt that it was free on the Xbox live thingy. Oh, and I made more pumpkin bread and banana nut bread* because we NEEDED it. Hubster also introduced me to Sangria SeƱorial. YUM!


      We shared our smooch at 12 on the dot and tried to remember what happened this past year. Ha! Kids wipe your memory out like nothing else. Obviously, the best part of our year was the arrival of our sweet Pumpkin. We had a lot of ups and downs with job changes, job loss, school, and what have you. Thankfully we have each other and a wonderful, supportive family to help us push through. We're looking forward to all the prospects on the horizon of the new year. We'll be moving, working through school, and continuing to adapt to being a family of five.

My hopes for the new year:
- A bigger place with a safe yard for the kids to play in
- Getting another year closer to being debt free
- Being healthier all around
- An awesome new job
- Finishing my degree (we'll see about that)
- Making something more of my photography and this blog
- A puppy (not likely but a girl can hope!!)
- Starting some "homeschool preschool" with my girls in the Fall
- Health and happiness for my family, of course

2013 in Summary
     Enrolled in school. New couch. New TV. Debt paid. Pink dinosaur birthday. Wonderful News! Mini golf. Softball games. AT. Lost my cat :( 4th anniversary. Elmo birthday. Big girl beds. Continuing school. Grant came through! Job lost. Becoming a family of five. 3 kids 3 and under. One is potty trained!! Job found. Thanksgiving trip. Snow storm. A's and B's. 5th married Christmas.

    Also, I must admit that I was a terrible southern lady today. No black eyed peas, greens, or cornbread here. Calm down. It'll be all right. I did make bread. ;)

Here's to a new year!

*I stared for five minutes trying to decide whether to write "pumpkin and banana nut breads" or "pumpkin bread and banana nut bread" or just "breads".

We Survived!!

    Yes! Not only did we survive our road trip for the holidays but my finals are over too! I'm in 100% Christmas mode now. I've all ready made a few loaves of pumpkin bread. I also attempted fudge.

    Here's the recipe  that I've been using for pumpkin bread. I just substitute one can of pumpkin for the legit, fresh pumpkin. I also splash in a good bit of allspice and extra cinnamon.

     And . . . for the second time in my life I totally ruined what is supposed to be an easy thing to make. Lame. I even gave the muck a second chance to sit in the fridge and become something magical overnight. Utter failure. I said many fudge-related words over the fiasco last night. I really wanted some fudge dangit!! It turned out like a burnt-chocolate, oily, melty tootise roll mess. Crap. It was a pile of crap. Even my three year old opened the fridge this morning and I kid you not (I wouldn't make this up) she says "That's not supposed to be in there, mama! IT goes in the POTTYY!" She sounded pretty offended.

(Yeah, I was so traumatized by the first failed attempt it took me over 10 years to try again. I'm sticking with normal baked goods. No more candy duds for me.)

     In other news. I'm an Auburn fan. In case you didn't know that! So, I'm pretty happy. Iron Bowl and SEC Champs!

Anyway . . . I'll be posting more cheery, festive junk in the next couple weeks! Just as soon as I get over that fudge I'll be baking up a storm too . . .

Speaking of storms . . . I hope everyone is enjoying the ice and snow more than I am!! Let it go! Let it go! Faaaar awaaaay.
